Make the most of in-season mandarins with this easy freezer treat

Whether you've got a glut of your own or you've got a good stash of in season mandarins, this simple no waste snack is a lunchbox winner.

🍊 What you’ll need

  • 2 mandarins, peeled and segmented (or use leftover segments from the fruit bowl)
  • 1½ cups plain or Greek yoghurt
  • 1–2 teaspoons honey or maple syrup (optional)

🥣 How to make it

  • line a baking tray or flat container with baking paper
  • mix yoghurt and honey together (if using), then spread it out evenly on the tray
  • press mandarin segments gently into the yoghurt
  • freeze for 3–4 hours until firm
  • break into pieces and store in a sealed container in the freezer for up to 2 weeks

💡 Tips to make it your own

  • add a sprinkle of shredded coconut, seeds or granola before freezing
  • use coconut yoghurt for a dairy-free version
  • swap mandarins for any soft or leftover seasonal fruit like banana, kiwi or berries

♻️ Waste less

Don’t toss the peel!
Dry mandarin skins in the oven on low heat and simmer later with cloves and cinnamon for a homemade air freshener. Or pop them in vinegar to make your own citrus-scented cleaning spray.
