Antipasto Tart recipe from 4 Ingredients


Love Your Leftovers with this simple and delicious tart from Kim McCosker of 4 Ingredients. It’s the perfect way to make the most of just about any leftovers you have in the fridge – zucchini, feta cheese, corn, asparagus, baby spinach, semi-dried tomatoes. You can even throw in some bacon, tuna or leftover roast chicken.

Serves 6
  • 1 sheet puff pastry
  • 200g antipasto mix
  • 3 eggs
  • 300g sour cream

Preheat oven to 200 degrees Celsius. Line a non-stick 20cm square ovenproof dish with baking paper. Line with puff pastry. Sprinkle with antipasto mix. In a bowl, beat the eggs and mix in the sour cream. Pour over antipasto and season with sea salt and cracked pepper. Bake for 30 minutes or until golden and set.

This is such a versatile recipe. Fill it with whatever vegetables and proteins your family will eat; it’s perfect to use up leftovers.
