Queen of easy (and tasty) cooking, Kim McCosker, and the 4 Ingredients team have come on board as campaign partners to support Living Smarts, ‘Love your Leftovers’ campaign.

“Several years ago I read an article about food waste, and I was astounded to read that in Australia one in five bags of groceries bought will end up in the bin,” Ms McCosker said.

“I quickly translated that to $20 from every $100 spent on groceries was going to waste. Soon after I wrote 4 Ingredients Menu Planning to help busy families simplify the task of planning before they shop”.

 

Here at Living Smart we are thrilled to have Kim and the 4 Ingredients team partner with our 'Love you Leftover's' campaign and to share some of her delicious recipes and tips in reducing food waste.

 

Chicken & Apricot Sandwich

 

As children, everyone I knew loved the classic Aussie dinner "Apricot Chicken". Well now you can enjoy it in your lunchbox too, using leftover roast chicken.

Makes 2

* 1 cup shredded leftover roast chicken

* 4 dried apricots, finely chopped

* 2 tbsp. mayonnaise

* 4 slices multi-grain bread

In a bowl, mix together the chicken, apricots and mayonnaise.

Use as a sandwich filling.

Slice before serving or wrap tightly and pop it into a lunchbox.

 

Optional: If you are making this sandwich ahead of time and don't want it to turn soggy, consider adding a layer of lettuce as a barrier between the bread and the chicken, just make sure the lettuce is nice and dry first.
